Programme Description
This training scheme is to provide basic introductory theoretical food safety training to those seeking work in the hospitality industry, and provide an entry point along the pathway for those wanting to pursue further study in food safety or food-related courses culminating in future employment in the hospitality industry.
Programme Content
This training scheme covers food legislation, NZ food legislation, food hazards, cross-contamination, personal hygiene, food temperature and food control plans (FCP).
Learning Outcomes
By the end of this course, learners will be able to
1. Understand the basics of New Zealand food legislation and its relevance to the food industry
2. Understand the basics of record keeping and Food Control Plans (FCP) to keep compliance with the Food Act 2014
3. Identify the basic types of hazards associated with food
4. Understand basic temperature monitoring systems to keep food safe
5. Prevent cross-contamination by understanding the basics of how food becomes contaminated
6. Reduce the risk of contamination by recognising the importance of basic personal hygiene when handling food
